There I was enjoying my Saturday. I knew deep down that I was forgetting something(Birthday cake). I had left like this all week but I just wasn’t sure what it was. At this point in time, I had given up. Whatever was going to happen would happen.

It was Saturday evening and I was preparing to go to bed when it hit me. ‘Tomorrow is my brother’s birthday and I have nothing to give him’ It was almost like I had been hit by a moving brick wall. Money as usual is my biggest issue, its probably most people’s biggest issue. Toppled with that, most stores don’t open on Sundays. So even if I was going to get him a cheap cake, it would almost be impossible.

I go to the kitchen and look around. My aim was to make him a cake but I wasn’t sure what type. I did know that it cannot just be a regular kind of cake. So from the ingredients around, I realised I could make him a Dulce de Leche cake. I still can’t pronounce it right though.

I began the long process of preparing this cake. The most important ingredient here is a Dulce de Leche. It is basically milk and sugar but it isn’t that straight forward to prepare.

I put in milk and sugar in a pot and brought it to a boil. I reduced the heat and from time to time, I stirred it and also remove the coagulated milk on top. This was a continuous process that took about 4 hours. At the end of it, I got a viscous dark brown liquid.

I was tired at this point. A little nap helped me get back to work. The process of making the cake is similar to the way you make vanilla cake. The main difference is the addition of the Dulce de Leche. I do have to admit, after adding the Dulce de Leche to the mixture, the smell and look of it mesmerised me.

I put the mixture in a cake tin and popped it into the oven. While in the oven, I quickly made a Dulce de Leche frosting for the cake. I made a normal buttercream icing and added some Dulce de Leche. Yes, the cake was really sweet. A wise man once said ‘They say the devil’s water it ain’t so sweet. You don’t have to drink right now but you can dip your feet every once in a little while’ The Killers – When you were young. That’s exactly what I was doing; dipping my feet.

I didn’t stop there; I never do anyways. I made what I call ‘Glass Sugar’. It is essentially caramel; sugar heated until it turns light or dark brown. I then spread the sugar on a tray and let it cool. The final result is sweet glass.

Funny enough, after going through all this stress, I don’t think my brother had a taste of the cake. I didn’t bother asking because I might have gotten a heart break from his answer.
